Slow Cooker Chili

Ingredients

  • 2.5 pounds beef chuck
  • 2 large onions chopped
  • 2 cloves garlic, minced
  • 1 can tomato paste
  • 4 cups beef broth
  • 3 tablespoons chili powder
  • 1.5 tablespoons cumin, ground
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper

Method

Trim visible fat from chuck roast and cut into 1/4 inch cubes. (You should end up with about 2 pounds meat.)

Place in slow cooker with remaining ingredients.  Mix well.

Cover and cook on low setting 10-12 hours or on high 4-5 hours, until meat is very tender.

If desired, serve with condiments such as sour cream, shredded cheese, minced green onions, and sliced jalapeno peppers.
